Orange Date Muffins (55)

1 Orange Rind
½ Cup Orange Juice – Fresh
½ Cup Dates – Pitted and Chopped
1 Stick Butter – Unsalted
1 Large Egg – Beaten
1 ½ Cups Flour
¾ Cup Sugar
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1 Tsp. Salt

1. Quarter the orange and seed it. In a food processor fitted with the steel blade blend the reserve rind, the orange, the orange juice, the dates, the butter and the egg until the mixture is combined well and rind is ground fine. Transfer the mixture to a large bowl.

2. Into a bowl sift together the flour, the sugar, the baking soda, the baking powder and the salt. Add the mixture to the orange mixture and stir until just combined. The batter should be lumpy.

3. Spoon the batter into 16 buttered 1/3 cup muffin tins, filling them 2/3 full and bake the muffin at 400 degrees for 15-20 minutes or until they are golden brown. Let the muffins cool on a rack for 5 minutes and serve warm.
