3 lbs. Monk Fish
1 lb. Mushrooms
6 oz. Small Shrimp
¼ Cup Parsley
Salt & Pepper to taste
2 Medium Onions
½ Cup Butter
½ Cup Flour
½ Cup Grated Cheddar Cheese
¼ Cup Bread Crumbs

1. Boil 1 onion, salt, pepper and parsley stalks with fish in water. Cook until tender.
2. Fry onion, mushrooms and red pepper in ½ cup butter. Set aside.
3. Make roux of ½ cup butter and flour. Add enough milk to make a thick sauce. Stir in parsley, mushrooms and shrimp. Pour over monk fish.
4. Sprinkle with cheese and bread crumbs.
5. Broil until golden brown.
