Fruit Cake (142)

1 Cup Sugar
1 Cup Shortening
1 Tsp. Salt
2 Eggs
2 Cups Applesauce
2 Tsp. Soda
1 Tbsp. Water
½ Cup Molasses
4 Cups Flour
1 Lb. Candied Fruit (Can be replaced with 1 lb. of golden raisins)
2 Lbs. Raisins
1 Lb. Currents
2 Tsp. Cinnamon
½ Lb. Walnuts
½ Lb. Pecans

1. Mix soda and water and stir into the applesauce.

2. Cream sugar, shortening, salt and eggs. Stir in the applesauce, molasses and 3 cups of flour.

3. Mix fruit, raisins and nuts with 1 cup of flour and the cinnamon. Pour cake mixture over the fruit and nuts. Stir with hands until well mixed.

4. Bake in loaf pans at 300 degrees for 1 to 1 ½ hours, just until done. Be careful not to let it get too dry. Burns easily!
