8 Endives
8 Slices Ham
½ Cup Butter
½ Cup Flour
5 oz. Cheddar Cheese
1 Egg – Yolk
1 Egg – White
½ Cup Bread Crumbs
Salt & Pepper

1. Boil Endive until tender. Drain and cool.

2. Make roux of flour and butter. Mix in enough milk to make a thick sauce. Stir in cheese and egg yolk.

3. Whip egg white and stir into sauce. Salt and pepper to taste.

4. Wrap endive in ham slice. Put in 9x13 pan and cover with cheese sauce. Sprinkle with bread crumbs and cheese.

5. Broil until golden brown.
