Carrot Nut Cake (44)

3 Cups Flour
2 Tsp. Baking Soda
2 Tsp. Baking Powder
¾ Tsp. Salt
4 Eggs – Beaten
1 ½ Cups Salad Oil
2 Cups Sugar
2 Cups Carrots – peeled
1 Cup Pecans – Chopped
½ Cup Raisins
2 Tsp. Cinnamon

Preheat the oven to 300 degrees.

Put the flour, baking soda, baking powder and salt in a bowl. Make a well in the center and add the eggs, the salad oil and the sugar.

Beat them all together and then add the carrots, nuts, raisins (floured to keep them from sinking), and the cinnamon.

Pour this into a buttered tube pan and bake for 1 hour and 10 minutes.

Remove from the pan and let cool on a wire rack.
